Leftover Beef Stir-Fry
Sunday fridge-clean-out: yesterday's beef gets a second act with rice noodles and whatever vegetables need using up.

Ingredients
- 1 lb leftover cooked beef, sliced thin
- 1 package wide rice noodles, cooked
- 3 carrots, thinly sliced
- 1 head broccoli, in small florets
- 1 tomato, diced
- 1 tbsp soy sauce + 1 tsp dark soy
- 1 tsp oyster sauce + 1 tsp sugar
Steps
- Separate the cooked noodles by hand so they don't clump.
- Stir the sauce ingredients together in a small bowl.
- Sear the beef briefly in a hot, oiled pan.
- Add the carrots and broccoli; cook until crisp-tender, then the tomato and noodles.
- Pour the sauce over and toss until glossy — add a spoonful of water if it sticks.
